1. 개요

밥솥(rice cooker/cauldron)은 밥을 짓는 솥이다.

예전에는 밥솥하면 가마솥을 의미했지만 전기밥솥이 가정으로 널리 보급된 현대에는 보통 전기밥솥을 의미한다.

대개는 밥짓기 전용의 솥을 의미하지만 밥솥으로 꼭 밥만 하지는 않는다. 사실 압력솥 하나만 있어도 찌거나 삶는 방식의 거의 모든 요리를 집에서 다 만들어 먹을 수 있다. 수육이나 삼계탕 등도 압력솥으로 조리하면 맛이 훨씬 좋아진다. 심지어 케이크도 만들 수 있으며 아예 압력솥으로 닭튀김을 만드는 식당도 있다.[1]

2. 역사

솥은 삼국시대 이전부터 사용된 것으로 오랫동안 사용된 물건이다. 다만 무쇠로 만든 가마솥은 서민들에게 보급된 것이 생각보다 늦어서 삼국시대 후기부터 서민들에게 점차 보급되기 시작한다. 그 이전에는 토기나 돌로 솥을 만들었다. 솥이 보급됨에 따라 단순히 곡물을 죽으로 만들어먹거나 쪄먹던 수준에서 밥을 지어 먹을 수 있는 단계로 나아갈 수 있었다.

1960년대 이전까진 가마솥이 밥솥으로 널리 쓰였다. 아직도 솥뚜껑이라고 하면 넓고 둥그렇고 무거운 가마솥용 무쇠 뚜껑을 떠올릴 정도로 많이 쓰였다. 그러다 1970년대 후반에 한국에 알루미늄 주물 방식의 압력솥이 출시되자 가마솥은 가볍고 연료도 덜 쓰는 압력솥에 밀려 사용량이 줄어들었고 도심에서는 전문 한식당이나 무쇠솥밥을 좋아해 일부러 쓰는 집 아니면 찾아보기도 어려워졌다. 일부 시골 마을에선 간간히 쓰는 집도 보이는 편이긴 하지만 서서히 사라지고 있다.

비슷한 시기에 압력밥솥보다도 월등히 편리한 전기밥솥이 나왔지만 초기엔 밥맛이 별로였기 때문에 외면받았으며 일부에서 보온용으로나 쓰였다. 하지만 전기밥솥에 압력밥솥의 장점을 결합한 전기압력밥솥이 나오면서 밥맛을 높이는 데 성공하고, 계속 지켜볼 필요가 없어 집안일에 투자해야 하는 시간을 크게 줄여주면서 밥맛까지 좋고, 음성 지원, 예약 취사 등의 다양한 기능도 갖추게되자 여성의 경제활동 및 독신 인구 증가와 맞물려 사용량이 늘어나게 되었다. 다만 즉석밥의 발달로 독신에서는 수요가 주춤해진 상태다.

3. 종류

3.1. 전통 솥

전근대 이전까지 한국의 부뚜막을 100% 차지했던 부엌의 안방마님. 솥은 솥인데 가마(아궁이에 불을 때어 열을 가하는 시설)에 얹힌 솥은 '가마솥'이라고 부른다. 반대로 가마와 결합되지 않으면 그냥 솥이다. 용도는 취사 전반으로, 뚜껑으로는 지짐 요리 전반을, 솥으로는 국물 요리와 주식인 밥을 취사하는 용도로 많이 쓰였다. 막걸리 등 도수가 낮은 술을 담은 후 불을 때면서 뚜껑을 뒤집어 얹고 찬물을 부어 뚜껑에 맺힌 진한 술이 꼭지로 모이고 솥 가운데 놓은 그릇에 떨어지게 하는 간이 술 증류기로 쓰기도 했다. 전근대 사회의 한 식구나 다름없는 소의 식사인 소죽을 끓일 때도 가마솥에 쑤었다.

솥은 삼국시대부터 쓰였다고 추정되는데 불을 때지 않아도 밥이 되는 신기한 솥 얘기가 삼국사기에 나온다. 고구려의 대무신왕이 부여 정벌 도중 얻은 솥인데 이 솥의 주인이 직접 솥을 짊어지고 고구려군과 동행했고 상으로 '부정'이란 성씨까지 하사받았다. 그러나 이 신기한 솥은 부여군과 전투 도중 잃어버리고 말았다.

이 즈음까지는 토기로 만들어졌으나 이후부터 무쇠로 주조되어 한민족이 애용하였다. 현대에야 시골을 가도 더 이상 보기 힘들 지경이다. 주조 방법으로 만들기 때문에 크게 만들 수는 있지만 재질이 무쇠인 특성상 충격에 잘 깨진다는 단점이 있다. 충북 보은 법주사에 가면 수백 명분 밥을 한 번에 지었다는 거대한 솥이 있다.

무쇠로 만든 솥은 지역마다 모양이 조금씩 다르다.

고려 태조 왕건이 후삼국 통일 기념으로 지은 절인 개태사에는 거대한 솥 문화재가 있다.

전통적인 밥솥을 구매하고자 한다면 반드시 재질을 고려해야 한다. 무쇠 솥은 자주 사용하지 않고 방치해 둘 경우 금방 녹이 슬어서 밥에서 녹내가 나 버리기 때문이다. 이따금 쓸 솥이라면 그냥 스테인리스강으로 된 값싼 밥솥을 사자.

무쇠 솥뚜껑은 불판용으로 고깃집에서 많이 쓰인다. 심지어 주물 공장에서는 고기 구이 용도로 쓰이는 적당한 크기의 솥뚜껑만 따로 만들기도 한다. 지금이야 프라이팬이 싸고 흔한 물건이지만 옛날에는 명절이나 제사 등에 전이나 부침개는 솥뚜껑을 거꾸로 뒤집어 부쳤다. 뒤집은 모양이 웍과 유사하므로 기름으로 볶고 튀기는 것에 적합하다. 뚜껑을 뒤집어서도 사용하고 반듯이 놓고도 사용하는 만능 조리도구다.

이것을 표현한 한자로 釜(가마 부)자가 있는데 부산광역시(釜山)의 '부'가 바로 이 글자다. 동구 좌천동 금성중학교 뒷산인 '증산(甑山)'이 가마솥 모양인 것에서 따 온 것이다.

가마는 일본어로도 가마([ruby(釜, ruby=かま)])라 말한다.[2] 한국과 달리 일본의 가마 뚜껑은 나무로 되어 있다.

돌솥, 뚝배기 등으로도 밥을 짓는 것이 가능하다. 돌솥밥이 나오는 식당은 대부분 돌솥에 바로 바로 밥을 짓는다고 보면 된다. 도저히 급하거나 일반 자취생이면 일반 냄비[3]에도 밥을 짓는 것이 가능하다. 다만 냄비는 불조절에 손이 많이 가는 편이다.

4. 왕권의 상징

특히 고대 중국에서는 솥이 황제의 상징 중 하나였다. 이때의 '솥'은 정(鼎)이라고 하여 위에서 묘사된 부뚜막에 거치해 놓고 쓰는 가마솥이 아니라 다리가 셋 달려 땅 위에 세워놓고 그 아래에서 불을 피워 음식을 조리하는 형태였다. 사회가 씨족 중심으로 구성되어 있던 시기, 이러한 솥은 일족이 모여 함께 식사할 음식을 만드는데 쓰였기에 일족을 규합하는 수장의 권위를 상징하는 매개가 되었고, 이러한 의미가 발전하여 하늘이나 귀신에게 제사지낼 때 바치는 제물을 삶는데 쓰이는 제기라는 의미까지 가지게 된 것이다. 그리고 고대 중국에서는 궁극적으로 천자가 나라를 대표하여 조상신 및 하늘에게 제사를 드리는 지위에 있었으므로 솥이 천자의 권위를 상징하는 매개가 된 것이다.

예를 들어 고대 중국에서 천자의 별칭중에는 '구주백(九州伯)', 즉 '아홉 개(九)의 주(州)를 관장하는 사람(伯)'이 있는데, 이는 구정, 즉 아홉 개(九)의 솥(鼎)과 관련이 있다. 선진시대 중국인들은 천하가 아홉개의 주(九州)로 이루어져 있다고 인식했고, 천자는 이 아홉개의 주를 다스리는 인물이기에 구주백(九州伯)이었다. 그리고 이 아홉 주를 다스리는 천자의 권위를 상징하는 물건이 바로 아홉 개의 솥이었던 것. 이러한 인식을 보여주는 고사로 전국시대 초장왕의 이야기가 있다. 춘추전국시대 초나라의 장왕은 다른 제후국들과 달리[4] 호칭에 '왕'을 사용하며 군사력으로 위세를 부렸다. 오랑캐를 정벌한 후 의도적으로 주나라 가까이에 대군을 배치해 일종의 무력 시위를 벌인 것이다.

그러나 주나라 천자는 차분히 대처했다. 오랑캐 정벌의 공을 치하한다는 명목으로 사신 왕손만을 초장왕에게 보냈는데 장왕은 그 사신에게 "솥의 무게가 얼마나 나갑니까?"라는 질문을 했다. 이에 사신은 "그런 것은 묻는 게 아닙니다."라고 답했고, 이에 장왕은 다시 "우리 초나라에서는 철이 많아 부러진 창끝만 모아도 솥을 서너 개는 만들 수 있소."라고 답했다.

지극히 외교적 수사법인데 이를 풀이해 보면

"솥의 무게가 얼마나 나가는가?" → 왕의 권위를 상징하는 정을 초나라로 옮겨와 내가 왕 해 먹겠다.
"그런 것은 묻는 게 아닙니다" → 아무리 쪼그라들었다고는 하지만 천자의 권위는 아직 주나라에 있다.
"부러진 창끝만으로 솥을 서너 개는 만들 수 있다" → 수틀리면 주나라고 뭐고 군사력으로 멸망시키면 그만이니 알아서 잘들 기어라.

한국에서, 그리고 아마 전 세계에서 가장 큰 밥솥이 괴산군에 존재한다.

문화재는 아니고 군 예산, 주민 성금을 모아 제작했지만 마땅한 용도를 찾지 못하고 지금은 애물단지가 되어 녹슬어가고 있다. 자세한 내용은 괴산군 문서로.
소속이 같은 사람이나 모기업이 같은 계열사나 조직 등에 '한솥밥을 먹다'란 표현을 사용하는데 솥 하나인 집 안에서 같이 밥을 먹는 한식구 같다는 의미다.

솥을 소재로 한 옛날 이야기도 있다. 옛날 가난한 선비가 가뭄으로 논이 메말라 죽기 직전에 놓인 올챙이들을 구해주었는데 그 올챙이들이 개구리가 되어 선비에게 작은 솥을 주었다. 그 솥은 뭐든지 넣고 사용하면 솥 한가득 불려주는 요술 솥이였는데 결말에서는 선비가 그 솥으로 불린 재산을 밑천삼아 열심히 공부해서 과거에 급제하자 솥이 자기 할일을 다한 것마냥 사라졌다는 결말과, 선비와 선비의 아내가 욕심을 부려 솥을 사용해 재산을 불리는 것을 너무 많이 하다 그만 솥이 녹아 없어졋다는 결말로 나뉜다.
과거 육류 섭취가 부족했음에도 철분 부족이 많지 않았던 이유가 밥을 지을 때 철분이 밥에 스며 들어서였다는 설이 있다. 행운의 철 물고기와 같은 원리이긴 하지만 정말 효과가 있는지는 논란이 있다.
조선 초기에 여진족에게 무쇠 가마솥은 전략 통제 물자였다. 명나라도 조선도 여진족이나 몽골족에게는 무쇠 솥을 일정 수량 이상 무역하는 것을 금지했는데 이유는 당연히 녹여서 냉병기를 만들까 두려워했기 때문이다. 이 때문에 당시에 만주와 몽골 지역에 강철은 무척이나 귀한 자원이었다.
상술하였듯 일본은 가마솥 뚜껑을 나무로 만든다. 일본에서는 "나무 뚜껑의 효과로 솥으로 밥을 지으면 적절히 대류가 잘 일어나며 여분의 열도 빠지기 때문에 전기밥솥보다 맛있게 뜸이 들여진다"라고 주장하는데 사실 일본 솥 뚜껑이 나무로 만들어진 것은 이런 이유보다는 쇠는 모자라고 나무는 널려 있는 게 일본의 환경이었기 때문이다.
농촌이나 산촌에는 가마솥 아궁이로 밥을 짓고 난방을 하는 가정이 아직도 많다. 농촌에서는 대부분 전기밥솥을 같이 사용하지만 강원도 심심산골 등 산촌에서는 매 끼니 밥도 가마솥으로 하는 경우가 제법 있다. 이 경우 쌀이 안쳐진 밥솥 안에 쇠그릇을 넣고 계란찜이나 나물찜요리를 만드는 경우가 많다. 한 번의 가열로 밥과 반찬을 동시에 만들 수 있어 효율적이다.
이러한 가정에서는 불씨 관리를 철저히 해야 한다. 자칫 잘못하다가는 불씨가 발화되어 큰 불로 돌변해 자신의 집과 재산은 물론 뒷산까지 태워먹는 대참사가 벌어질 수 있기 때문이다. 이럴 경우 국가나 지자체로부터 형사소송이 제기되어 검경 정모와 막대한 벌금을 내야하는 것은 기본에 최악의 경우 감옥살이를 할 수 있으며 거기에 대다수의 동네 뒷산이 사유지인 까닭에[5] 피해를 본 소유주로부터 민사소송까지 당해 막대한 피해보상금을 소유주에게 내야 하는 대참사가 벌어질 수 있기 때문에 더더욱 불씨 관리를 잘해야 한다.
과거에도 불씨 관리는 잘 해야만 하는 일이었는데 위에 써놓은 현대의 경우와는 다르게 불씨 꺼뜨리면 다시 불 피우기가 무지막지하게 어렵기 때문이었다. 보통은 집집마다 있는 화로의 재 속이나 부뚜막 아궁이 안의 숯더미 안에 불씨를 묻어놓거나 했다. 만약 어느 날 아침에 불씨가 꺼진 것을 발견했다면, 그 집 며느리는 심한 경우 소박을 맞기도 했다.[6]
서울교통공사의 2000호대 VVVF 전동차 4차분과 4000호대 VVVF 전동차 3차분은 전두부의 형태로 인해 밥통이라는 별명이 붙었다.[7] 일본에서도 183계 전동차 등 구 국철 시절 특유의 롱노우즈 전두부가 있는 특급 열차들을 밥통열차라고 불렀다.
